from around the world each week. We seek only the absolute best in the world. We have many
sources and are, therefore, not dependent upon any particular supplier, who may not have a top quality product.
We reject any seafood that does not meet our "world-class" standards.
Our rice, seaweeds (Kombu, Nori, Wakame, Hijiki) and other Asian ingredients are of the
highest quality, costing much more than those commonly used in lesser establishments.

According to recent studies, raw fish and fresh fish contain a component that lowers the risk of
lung cancer.
Information from Japan
indicates that the number of people there who contract lung cancer is extremely low, in spite of the
fact that Japan has more cigarette smokers than other countries.
The cause was found to be in the Japanese diet, which has included raw fish throughout most
of its history.
Doctors predict that hundreds of people’s lives could be saved by following a Japanese-style diet.
Around the world, doctors have been studying people who eat raw fish and those who do not.
The results make it clear that people who eat a lot of raw fish and/or fresh fish have
a significantly reduced risk of lung cancer.
At the same time, it was found that dried fish has less of the cancer-reducing component
that raw or fresh fish, and therefore does not have the same effect.
Raw fish appears to be most effective against glandular cancer, one type of lung cancer.

What's in Your Curry?
Many of our exotic dishes contain herbs and spices from far away lands. Generally speaking, these
cultures have utilized these herbs and spices for hundreds, perhaps, thousands of years, for a variety
of reasons, which can include food preservation, antibacterial action, antifungal action, health benefits,
flavor, aroma and many other reasons.
While modern day scientists don't give these cultures much credit for their use of the "scientific method," continuing
research reveals that many of these cultures' herbs and spices have powerful properties that were
known to them for a very long time, but doctors and scientists wouldn't believe what they were told.
A similar situation exists today in the Amazon rain forest, from whence 70% of our modern day drugs
were derived.
For the others in the village, who didn't have the time to be an herbalist or shaman, those ancient
herbal practitioners, simply created recipes including certain ingredients that they knew were healthful as well as
appealing to the palate.
A great example is Indian Curry. At KenZen, we use authentic, imported spices to create a variety of
